Recipes

The recipes I have listed here are the ones that I learned over the course of my graduate life away from home. I realized that eating out daily was not only expensive but quite unhealthy, so, I started exploring new recipes in my free time. Slowly and gradually, my cooking skills have significantly improved. When I visited home this summer, everyone complimented my cooking. :-)
P.S. These recipes are not my own inventions but I have modified most of them according to my taste and to make them easy to cook.

1. Green Smoothie 
This a quick healthy breakfast idea. One of my roommates told me about it and now this is my routine drink :-)

Ingredients:
5-6 spinach leaves
1 kale leaf
4 tablespoon Vanilla yogurt
1 Lemon
1 Banana

Blend them all together and enjoy the healthy, yummy and green smoothie. Makes 1 glass.
You can add any other fruits you like. Banana gives the smoothie a good consistency.

2. Guacamole
This is a Mexican salsa sauce eaten with tortilla chips. It is a healthy because it made with fresh vegetables.

Ingredients:
1 Avocado
1 Tomato
1 small onion
Salt to taste
Black Pepper
Red Pepper
Half Lemon

Cut the avocado into two halves. Remove the seed and scoop out its flesh, and mash it in a mixing bowl. Chop the onions and tomatoes and add to the bowl. Squeeze the lemon and add salt and the two peppers according to taste. Mix all the ingredients together till it is a smooth and creamy paste. Enjoy with Doritos or tortilla chips.

3. Sandwich bread pizza
This is a quick lunch idea if you are out of options. I got this idea from my sister (who got it from her friend) one day when I texted her asking what should I eat for lunch.

Ingredients:
Bread slices
Butter
Cooked boneless chicken
Spinach leaves
Chopped onion 
chopped bell pepper
Any kind of cheese
Tomato cut into rounds
Ketchup

In a baking pan, broil the vegetables (spinach, bell pepper and onions) in the oven for 5-8 minutes.
Spread butter over slices as you do for your breakfast.
Add the broiled vegetables, and chicken over each slice. Top it with tomato slices, ketchup and cheese. Now broil these slices again in the oven for another 5 minutes and voila your pizza slices are ready.

4. Trifle 

Ingredients

Marie biscuits (You can find them in the mexican section or in Indian stores)
Whipped cream topping 
Nestle Table cream
Canned Pineapple chunks
Pineapple juice (Use the juice from the canned pineapple)
Melted caramel 
Vanilla essence

Preparation

1. Soak the biscuits in the pineapple juice and layer them in the serving tray. Don’t oversoak, otherwise they will break or turn mushy
2. In a bowl, mix the whipped cream, pineapple chunks, 2-3 drops of vanilla essence, table cream, and some drops of caramel.
3. Add a layer of this mixture on top of the biscuit layer.
4. Add another layer of soaked biscuits, and finally a layer of the mixture. (You can make as many layers as you want)
5. Crush some biscuits finely and sprinkle over the top layer.
6. Refrigerate for an hour and serve.
